Italian Meatball Soup (from Pioneerwoman)

I have some cabbage in the frige which has to be used asap! Something is telling me that it's the time for soupie... Tonight I will try out the Italian Meatball recepie by pioneerwoman .

Ingredients:

Meatballs 
- Ground beef
- Parsley
- Egg
- Garlic
- Grated parmesan
- Salt & Pepper
- Ground oregano
- Lemon juice

Mix and chill the mixture for 30 min. Make around 24 balls

Soup 
- Beef stock (less sodium)
- Tomato paste
- Salt
- Onion
- Carrots
- Celery
- Potato
- Cabbage
- Parsley
- Pepper corns
- Bay leaves

 Process.

- Heat a pot over medim-low heat
- Add 3 tablespoons olive oil
- When it's hot, throw half of the meatballs
- Get them brown on the outside (2 min cooking)
- Repeat the same with the rest
- Put the meatballs aside

- Stock, salt, tomato paste and bundle of herbs are going to the pot.
- Afer 30 min of boiling (on redused heat) dump in the onions, carrots, celery, and potatoes.
- Simmer for 15 min
- Throw in the cabbage and the meatballs
- Bring to a boil and reduce heat, cook for 8-10 min
